You have undoubtedly already spotted the SUE bites at least once. On Instagram, or somewhere in a coffee or lunch bar. The founder of these famous colorful bites is Kim Sue Palm, and we interviewed her.
No party without cake, right? No, absolutely not! Cake completes the party! Certainly, if there’s cake that everyone can enjoy, whether you have an allergy, only eat vegan food, want to make healthier choices or just treat yourself! Talking about a party: you have recently become a mother of a beautiful son! How do you combine motherhood with your company? Last February, we became the proud parents of our son Ché Milo. Fortunately, Der has done a lot during my maternity leave. I’m very happy that run SUE together for 1.5 years now. Our fantastic team also puts in a full 100%. This makes combining motherhood and running a business a lot easier. Ché is fortunate enough a happy boy, so occasionally I take him to meetings. He has seen a lot of places and met a lot of people already!
Let’s go back in time, tell us some more about the start of SUE. I was always busy with healthy eating. I did everything in a responsible way, except for sweets. So that was the reason I started experimenting with this in my own kitchen. Via a girlfriend, the bites got their first point of sale and the whole adventure started. I had to register my company at the Chamber of Commerce and decided to keep the name close to myself. It became SUE, my second name. Later I added ‘sweet without sugar’ because sugar-free candy is the most important point for me. We were the first catering supplier in the Netherlands to have sugar-free, gluten-free and vegan cakes and decided to name the cakes ‘bites’! After a year of selling ‘sweet without sugar’ only at other spots and markets, it was time for the opening of our first store. We took that opportunity with both hands. In the meantime we are renovating our first location and opening our new store in early July!
So, we’re talking about healthy pastries. But how!? And maybe even more important: can we enjoy it without feeling guilty? Our bites consist only of natural nutrients, which makes them a healthy alternative to a pastry filled with sophisticated sugars and all kinds of processed ingredients. For example, we use many nuts, dates and coconut products. Our bites, of course, also contain calories, but I’m not a calorie counter. I believe in eating natural and healthy products.
It’s important to take care of yourself and your body. But we can also enjoy a donut with white chocolate glaze and lots of sugar. Do you ever sin? Of course I also sin every once in a while! I’ve always been crazy about sweets, that’s why SUE is created. During my pregnancy, crazy enough, I didn’t feel like eating sweets. But since Ché is born, I can enjoy it again and really like to have some Tony Chocolonely. At the moment, the SUE Store on the Karel Doormanstraat is being renewed. What can we expect from the store when the renovation is completed? Yes, so exciting! We expect to open our new store in early July. Hopefully we will have some nice weather because we have a big and sunny terrace. The ‘sweet without sugar’ range is even bigger and we have an extensive breakfast and lunch menu. We want to create a place for everyone: when you eat vegan, gluten-free and consciously, you must go to SUE! On the menu, there’ll be many recognizable dishes, but all according to the SUE concept! For example, we have a burger with a very surprising bun and an English breakfast.
Imagine you can only make one taste of ‘sweet without sugar’. Which one would that be? My ultimate favorite remains the TiramiSUE!
